Strawberry Hibiscus Bellini

Light, bright, and refreshing, Bellinis are a perfect drink to celebrate summer brunch. While the Bellini is typically made with peach purée, there are many other fruits that compliment this delicious sparkling drink including fresh strawberries! If you’re looking to avoid alcohol, you can also skip the Prosecco and prepare a cannabis-infused Bellini instead with Gem + Jane’s Strawberry Hibiscus.

This flavor combination is delightful on the palate, especially during summertime. To play up the strawberry and hibiscus notes, I recommend preparing a strawberry hibiscus purée using fresh strawberries, lemon juice, chilled hibiscus tea, and a dash of honey to add some sweetness. After you’ve prepared the purée, simply add an ounce (or a couple of bar spoons) to the bottom of a chilled Champagne flute, then top with Gem + Jane. This bubbly beverage will tingle the taste buds and impress your guests with bright pops of color!

In addition to the flavorful ingredients and fanciful garnishes, this recipe provides a unique phytocannabinoid blend, incorporating Delta-8 THC, Delta-9 THC, and CBD. If you’re unfamiliar with Delta-8 THC, it presents less potent effects than Delta-9 THC if consumed in moderation. Due to the low-dose nature of this cannabis-infused drink, it provides a similar experience to drinking a glass of wine or beer. Feel happy and mellow as you enjoy this tasty elixir.

Target Dose: 2 mg Delta-8 THC, <1 mg Delta-9 THC, 1 mg CBD per drink (using ½ can of Gem + Jane Strawberry Hibiscus)


  • Food processor or blender
  • Measuring spoons
  • Chilled Champagne flute
  • Bar spoon
  • Cocktail picks

To Make the Strawberry Hibiscus Purée:

  • 3 large strawberries, cut into quarters
  • ½ ounce lemon juice
  • 1 ounce hibiscus tea, chilled
  • 1 tablespoon honey

 To Make the Strawberry Hibiscus Bellini:

  • 1 ounce strawberry hibiscus purée
  • 1 to 2 slices strawberry, to float in the drink
  • 6 fl. Oz. of Gem + Jane Strawberry Hibiscus
  • Strawberry slice, lemon twist, and seasonal flowers for garnish

Begin by preparing the strawberry hibiscus purée. Add the strawberries, lemon juice, hibiscus tea, and honey into a food processor or blender. Purée until smooth and creamy, then transfer into a 4-ounce Mason jar (save the leftover purée for a second round!). Place in the refrigerator to chill for about 15 to 30 minutes.

Once chilled, add the purée and slices of strawberry to the bottom of two chilled Champagne flutes. Top with Gem + Jane Strawberry Hibiscus, then stir together using a bar spoon to combine. Garnish with an additional strawberry slice, lemon twist, and season flowers on a cocktail pick. Serve immediately and enjoy.
